I'm going to Italy next week and then on a cruise to the Greek Isles and other places. What do I need to do in order to prevent excess charges for data or calls or whatever. I signed up with ATT World Traveller for calling and I understand that I will have to pay for wifi along the way.

I think your safest bet would be to call AT&T and see what they recommend.... I would also think keep mobile data turned off unless you are going to need it....

Is there such a thing as "fetch new data" on this phone?

If you are referring to how often it syncs... Yes but that is done within each program or app... You could turn the ones you don't want syncing off while changing the others to once a day or hour or 6 hours or whatever you would like...
